Whole 30 Food Journal for May 17, 2012

Notes: I probably overdid it on the fat today. I wanted to try out some organic, locally farmed pork sausage. It was delicious but I could tell that it had quite a bit of fat in it. On top of that, I used two tablespoons of butter with my cauliflower mash tonight for dinner even though I was eating salmon which is a fatty fish. I’m also developing an addiction to coconut butter haha – going to have to watch that.

Fat definitely isn’t the enemy but today my fat intake was higher than is recommend for the Whole 30 by quite a bit. Gotta get that under control.

9:00 a.m.
3 brazil nuts
4 whole medium sized eggs
1 tsp. clarified butter
6 oz. pork sausage
32 oz. water

12:30 p.m.
4 capsules fish oil (1200 mg each)
16 oz. water

1:00 p.m.
1 chicken breast (made into chicken salad)
-1 T homemade olive oil mayo
-1/4 medium avocado
1 handful of grapes
1 handful of mini carrots
16 oz. water

3:00 p.m.
Post workout
1 banana
16 oz. water

5:00 p.m.
3 whole eggs
4 oz. pork sausage
2 T coconut butter

8:00 p.m.
12 oz. baked salmon
1/2 head cauliflower (mashed)
2 T clarified butter
2 handfuls of sugar snap peas
16 oz. water

11:30 p.m.
3 brazil nuts

    Just new to your website via Gluten Free Cooking School email. My cholesterol is high so wondering about all the eggs in the diet?

    Hi Karen! Contrary to popular belief, dietary cholesterol (cholesterol that you eat) doesn’t necessarily translate to high cholesterol. What has your diet been like for the last few months?

    I am celiac so I’m gluten free. (2 yrs only) We garden so eat lots of vegies and fruits. My diet is basically very good but the last time my Dr checked my cholesterol it was 240 and has never been that high before. My exercise program was lacking but I’m active.

    My advice would be to watch out for other things that take your blood sugar too high such as white rice, candy, etc.

    Yes the cholesterol in foods can affect some people so you have to be careful. This is simply how I’m doing the whole 30. You could do it with out the eggs!
